How to Make Shrimp Orzo Bowl

A spoonful of orzo with fresh vegetables, crispy shrimp, and a simple lemon dressing. Yummm. The simplicity of this dish is effortless, yet so delicious and nutritious. This Shrimp Orzo Bowl is a rainbow🌈 in a bowl. I guess we’re missing blue… well, hmm… ignore that. But we’ve got the rest covered!

With an array of vibrant colors, we’ve got the red tomatoes, orange carrots, yellow from the lemon juice and orzo (I’m counting that!), green with the cucumber, fresh herbs and seasoning, blue (remember…? we’re ignoring that), and purple shallots!

Did you know that generally, different colors of fruits and vegetables indicate different nutritional values? While we love our greens, don’t forget to also focus on the other colors of the rainbow, this will help you maximize nutritional benefits!

We cooked our shrimp with the shell and tail on. The shell helps lock in all the flavors and juices of the shrimp 😋 Don’t be afraid to also eat the shell. Yes, you heard that right, it’s totally edible! It’s best eaten when crispy with all the flavors on there. Feel free to peel it off too 🍤

Let’s get into it!

What You’ll Need:

  • 2 cups orzo

  • 2 tbsp olive oil

  • 1 lb shrimp (or any protein you’d like)

  • 2 tbsp dried oregano

  • 1 tbsp dried basil

  • salt and pepper to taste

  • 1 cucumber, sliced and quartered

  • 2 shallots, diced

  • 1 cup cherry tomatoes, halved

  • 1 cup shredded carrots

  • 2 stalks green onion

  • cilantro

  • 2 tbsp lemon juice

How to Cook It:

  1. Preheat oven to 400 F

  2. Prepare orzo according to package instructions.

  3. On a baking sheet, drizzle some olive oil on the shrimp and sprinkle with salt and pepper. Add in diced shallots. Roast in the oven for 5 min, or until cooked through.

  4. Cut up cucumbers, carrots, green onions, tomatoes, cilantro, and place in a mixing bowl. Drizzle with lemon juice, olive oil, and season with salt and pepper.

  5. To assemble, place the orzo on the bottom of each bowl, then fresh veggie mixture, and the roasted shrimp. This orzo bowl would be great with tzatziki sauce and feta cheese!
