How to Make Vegetarian Stuffed Shells

We didn’t even miss the meat in this…at all!

What You’ll Need:

  • 1 pack of large pasta shells

  • 1 jar of your favorite marinara sauce (our favorite is Whole Food’s Rao’s Roasted Garlic)

  • 1 small container of ricotta cheese

  • 1 pack of mushrooms

  • 1 handful of spinach

  • 2 garlic cloves

  • 3 tbs fresh oregano

  • Shredded parmesan cheese

  • Shredded mozzarella cheese

  • chili flakes

  • Fresh basil

  • Salt & pepper to taste

How to Cook it:

  • Cook pasta shells according to package instructions

  • Sauté garlic, oregano, and mushrooms in olive oil. Add salt and pepper to taste.

  • Remove from heat and mix with ricotta cheese

  • Pour marinara sauce to cover the bottom of a baking dish and sprinkle parmesan

  • Stuff shells with a generous amount of the filling and line up shells on top of marinara sauce

  • Sprinkle with parmesan, layer more marinara sauce, and top with mozzarella and basil

  • Bake for 10 minutes at 400 degrees until bubbly. Enjoy!
