How to Make Catfish Spring Rolls
One of my favorite summer meals is spring rolls! I love all the fresh veggies in this dish which makes it light and refreshing. This catfish recipe is flavorful, healthy, and so satisfying!
What You’ll Need:
- 1 catfish 
- 1 tsp white pepper 
- salt & pepper 
- To pour on fish before cooking: 2 tbsp oil/2 tbsp butter 
- 1 cup green onions 
Puree Stuffing for Fish
- 6 cloves of garlic 
- 1/2 white onion 
- 2 inch fresh ginger root 
- 1 cup cilantro 
- 1 tbsp soy sauce 
- 1 tbsp olive oil 
Veggies & Noodles for Spring Rolls
- 1 pack spring roll wrappers (Three Ladies is our favorite) 
- 1 pack of fine vermicelli 
- Romaine lettuce 
- Cucumbers 
- Perilla leaves/sesame leaves 
- Mint 
Peanut Hoisin Sauce: heat all ingredients in a pot until peanut butter melts down
- 1/2 water 
- 1/2 extra chunky peanut butter 
- 1 cup hoisin sauce 
- chili sauce (optional) 
Green Onion Oil Sauce: heat all ingredients in a pan until green onions are aromatic
- 4 tbsp vegetable oil 
- 1 cloves minced garic 
- 2 tbsp mined white onion 
- 3 tbsp sliced green onions 
How to Cook It:
- Preheat oven to 400 degrees 
- Puree all ingredients under “Puree Stuffing” in food processor 
- Stuff catfish, sprinkle either side with white pepper, black pepper, and salt, spread sauce on either side of catfish and top with fresh white onions and green onions 
- Bake in oven for 30 min and baste with sauces in pan midway through 
- Broil fish for 3 minutes to create a char on the skin 
- Mix the two dipping sauces to taste 
- Roll them spring rolls (see video) and dip that sauce!
