How to Make Crispy Air Fried Prawns

For my birthday last year, Dan surprised me with dinner at Somni for a 26 course meal. It was a once in a lifetime experience and one I’ll remember forever. One of the courses that was seared into my memory was a head-on colossal Santa Barbara spot prawn. It was so juicy, smokey, sweet, and fresh. I have been craving it ever since and was inspired to create our own twist on this colossal prawn at home! The head of the prawn is my favorite part as it has all the flavor, richness, and juiciness. A pro-tip to not waste any of the shrimp is to pinch the tail to get out the last bit (see video below).

What You’ll Need:

  • 5 colossal shell-on head-on shrimp

  • 1/2 cup corn starch

  • 1/4 tsp black pepper

  • 1/4 tsp white pepper

  • 1/4 tsp brown or white sugar

  • 1/4 tsp salt

  • 1 tbs salted butter

  • 3 tbsp canola oil

  • 1 diced jalapeno

  • 2 minced cloves of garlic

  • Green onions for garnish

How to Cook it:

  • Pre-heat air fryer to 450 degrees

  • Wash and pat dry the shrimp (be careful of the sharp rostrum aka horn)

  • Mix together corn starch, black pepper, white pepper, sugar, and salt in bowl

  • Batter shrimp in dry mixture and place into the air fryer basket that has been sprayed with oil

  • Spray the top generously with more oil

  • Air fry for 4 minutes

  • Flip shrimp and air fry for another 2 minutes

  • Cook jalapenos and garlic in oil and salt to taste

  • Add shrimp into pan, melt butter, and toss shrimp in sauce

  • Plate the shrimp, pour everything remaining in the pan on top of the shrimp, sprinkle with green onions, and enjoy!
